Quick and Easy Breakfast
I do my workouts in the morning, and when I have done a particularly challenging workout, I love having a quick and easy meal, that is also healthy and nutritious, already prepared in the mornings. Eggs have become a staple breakfast food for me, because they are so quick and versatile.
My husband is a roll out of bed, and run out the door kind of person. Having a quick bowl of cereal when he gets to work, which just doesn’t cut it when he is doing strenuous work, so I also like to have something for him to grab on the way out the door.
These easy baked eggs can be prepared in a large batch and stored in the fridge.
They tend to go fast in my house. Often I prepare a large batch, and my children will have just finished eating a meal, but they somehow find more room in their bellies for these!
I like to a sauté some veggies to serve on the side, or to top them on a bed of greens, but they are also great for grabbing as you run out the door.
Easy Baked Eggs
Eggs
Bacon, ham or sliced meat of preference
Coconut oil or olive oil
Preheat oven to 350. Add a small amount of oil to a muffin tin, then loop bacon into each individual section, or place a slice of meat in the sections. Crack egg into bacon lined muffin section.
Bake for 15-20 minutes. Let sit for a couple of minutes before removing from pan.
Eat and enjoy, or store in fridge.
Variations:
top with cheese
scramble the eggs and add veggies.
